This soft and slightly moist Honey Cake tastes just great with the right sweetness to me, at least. It's a simple cake flavoured with honey and lemon and the sweet aroma wafting through the kitchen during the process of baking was just wonderful. This makes a yummy dessert served with a dollop of ice cream or even on its own with a cup of coffee or tea.
Honey Cake
Ingredients:
200g plain flour (1 3/4 cups)
3/4tsp baking powder
1/2tsp baking soda
1/2tsp cinnamon powder
1/2tsp salt
2 large eggs
70g caster sugar or brown sugar (1/3cup)
75g honey (1/4 cup)
100g fresh milk (1/2 cup)
85g vegetable oil (1/2 cup)
zest from 1 lemon
Method:
- Preheat oven to 165 deg C. Grease a 7 inch bundt pan or line a 7 inch round cake pan. Dust with flour; tap out excess. (Better to change to a smaller cake pan, as my 8 inch cake pan is a little too big for this cake)
- Sift flour, baking powder, baking soda, cinnamon powder and salt together into a bowl. Add lemon zest and mix well. Set aside.
- Whisk eggs and sugar on high speed until pale and thick.
- In a cup, combine honey, milk, oil and zest together, Mix well and slowly add into egg mixture at low speed until combined.
- Add in flour mixture in few batches, mix until smooth, Pour batter into pan.
- Bake until dark brown for about 40-45 minutes or a cake tester inserted in the center comes out clean..
- Let cool in pan for about 10 minutes. Then remove cake and cool on wire rack.

1/2茶匙 肉桂粉
2个 大鸡蛋
70克 细糖或赤砂糖
75克 蜂蜜
100克 牛奶
85克 菜油
1粒 柠檬皮屑
做法:
- 预热烤箱至摄氏165度。一个7寸空心烤盘或7寸圆形烤盘,铺纸涂油撒粉。再将多余的粉倒出。(我用的是8寸空心模有点大了,蛋糕烤出来后觉得很矮)
- 粉类及盐一起过筛到一个碗里,加入柠檬皮屑,拌匀备用。
- 将鸡蛋和糖快速搅打至发及泛白。
- 把蜂蜜,牛奶和油一起混合均匀。慢慢的倒入蛋糊里,用底速度拌匀即可。
- 然后分次加入粉类,搅拌面糊至顺滑便可倒入烤盘。
- 放进烤箱烤约40-45分钟至深棕色或竹签插入蛋糕内部,拔出没有粘糊,就表示熟了。
- 让蛋糕连烤模待凉约10分钟,才取出放在凉架上待凉。
