Easter April $20 Budget Meal ~ Quick and Simple Meal

I've have been quite busy last month and missed out on the First Budget Meal hosted by Ellena of Cuisine Paradise. This event is to urge those who loves to prepare simple homecooked meal in order to accumulated more cooking ideas as well as sharing with each other on how to purchase ingredients with a minimum sum of budget given. Here is my submission for Easter April $20 Budget Meal using Egg as one of the main ingredient.


Menu for 2 Dishes 1 Soup S$14.65 (Serves 4)
Minced Pork Omelette - S$3.60
Steamed Tilapia - S$7.60
Fish Ball Spinach Soup - S$3.45



Minced Pork Omelette

Ingrediets:
200g Minced pork mix well with seasoning for 10 mins
1 Onion - chopped
4 Large beaten eggs with some pepper (*is 4 eggs not 3 as seen in the picture)
1 tbsp Garlic - chopped

Seasoning:
1/2 tbsp  Dark soy sauce
1/2 tbsp Oyster sauce
1 tsp Light soy sauce
1/2 tsp Sugar
2 drop Sesame oil
1/2 tbsp cooking wine
dash of pepper
1/2 tbsp Corn flour
1 tbsp Water
1/2 tbsp Cooking oil
2 stalks Spring onion, cut finely


Method:

Cost of ingredients:
Minced pork = S$2.40
4 Eggs = S$0.80
1 Onion = S$0.40


Steamed Tilapia
Ingredients:
1 (400g) Fresh live fish (Tilapia) 
1/2 tsp Sugar
1 tbsp Light soy sauce
a drop of sesame oil
2 tbsp water 
3 slices Ginger - shredded
some cut Chilli and Spring onion

Method:

Cost of Ingredients:
Tilapia = S$5.90
Spring onion = S$0.70
Chilli/Ginger/Garlic =  S$1.00


Fish Ball Spinach Soup

Ingredients:
400g Spinach (Hing Cai)
1 packet Fish ball
3-4 Garlic
60g Anchovies
1 sliced Ginger
1.5 litre Water


Method:

Cost of Ingredients:
Spinach (Hing Cai) = S$1.30
Fish Ball (10 pcs) = S$1.35
60g Anchovies = S$0.80 

You can cook all these dishes almost at the same time (only prepare the stock first), put the fish in the steamer when you're about to finish making the omelette. Then heat up the stock and add fish balls and spinach.
