My family loves prawns omelette with onion. It is the most simple, easy and delicious and it can be done within 10 mins. I usually cook this dish whenever I run out of idea what to cook for lunch or dinner and it goes well with rice or porridge too.
150-200g Prawns - shelled, cleaned and cut cubes (not too small)
and season with:
1/8 tsp Salt & dash of pepper
1/4 tsp Light soy sauce
1/4 tsp Sesame oil
1 Onion - shredded
3 Large eggs - lightly beaten with some light soy sauce about 1/2 tsp and dash of pepper
- Pour some oil in a non-stick pan and fry onion still soft.
- Add prawns and fry till just cooked.
- Spread out onion and prawns evenly, then pour beaten eggs over it.
- Swirl pan around to spread the omelette evenly.
- When the eggs have set about 2-3 mins, flip the eggs over and cook for another 2-3 mins.
